Granny’s Mexican Breakfast Casserole
INGREDIENTS:
4 eggs
1 tsp. Taco Seasoning
1/4 cup Parmesan Cheese
2 tsp. (rounded) Granny’s Bacon Drippings
1/4 cup grated Mexican Blend Cheese
1/2 can Rotel
1/4 cup chopped onion
Optional serving options:
Jalepenos
Sour Cream
Salsa/Tobasco
PREPARATION:
Preheat oven 350 degrees
Melt Granny’s in oven in cast iron skillet or oven proof pan/dish
Mix eggs, seasoning, Rotel, omion and parmesan.
Pour mixture into heated baklng dish, sprinkle with the Mexican Cheese Blend
Bake for 30 minutes or until done.
Serve with options.
